AIP Matzo Bread

Finally came up with an AIP Matzo Bread that tastes really delicious, so I thought I would share.

INGREDIENTS:

1 cup cassava flour

1 cup tigernut flour

3/4 cup water

3 tablespoons avocado oil

1/2 teaspoon salt, or more to taste

Preheat oven to 475. Line a baking sheet with parchment paper.

Combined ingredients. Adding a touch more water if needed. Should feel like regular dough. Roll out between two pieces of parchment paper to an approximate 8×6 inch rectangle. Place it on the parchment lined baking sheet. Poke it with a forks if you want that look.

Bake 4 minutes and then flip it if it’s solid enough to do without breaking. If it’s not, give it a few more minutes. Then bake another 4-8 minutes.

Air Fryer Zucchini Hummus (easy, paleo, AIP seed reintroduction )

I was able to add back some seeds after 7 years AIP. Now I am finally able to make hummus 🎉. I tried making hummus many different bean substitutes and zucchini is definitely the best! I suspect this could be done with a substitute of tigernut butter (just combine tigernut flour and avocado oil) if you haven’t added back seeds. I listed the coriander as optional in case someone has added back sesame, but not coriander yet. Otherwise, use it. It’s an important flavor. I eat this with Nuco Coconut Wraps, Siete chips or sliced Persian cucumbers. Serve this with Cauliflower Tabbouleh for a complete meal.

INGREDIENTS:

For Air Fryer Zucchini:

4 cups zucchini, peeled and cubed

1 Tablespoon avocado oil

1 tsp salt

To complete the hummus:

4 tablespoons fresh squeezed lemon juice

4 tablespoons olive oil

3 tablespoons tahini

2 cloves garlic, peeled

1/4 tsp coriander, optional

1 tsp salt, or more to taste

METHOD:

Toss zucchini, oil and salt together. Air fry at 430 6-10 minutes. You want them Al dente, not soft. Allow to cool slightly.

2. Combine the zucchini and all the rest of the ingredients in a food processor or blender. Process until fairly smooth. If it’s runny, place it in the fridge to set.
